Chicken Soup and Rice

Place chicken in a large pot and cover apx. 3" above chicken. Add rice, boullion cubes, bay leaves, carrots, celery salt and pepper. Cover and bring pot to boil over medium heat. Reduce heat to low and simmer for about 45 minutes to 1 hour. Remove the chicken from heat and let cool for a few minutes. Debone the chicken with a fork and knife. Add chicken without bone back into pot. Stir in and add salt and pepper to taste if necessary.


4 chicken thighs
4 chicken breasts, remove the skin
2 chicken boullion cubes
2 carrots, cut in slices
2 celery stalks, sliced
1/2 cup rice (preferably Texmati)
2 bay leaves
1 tsp. salt
1 tsp. pepper
