Baked Potato Soup

Melt butter in pot over medium heat.  Mix in flour, and stir with a whisk. Continuously whisk as you gradually add in milk and chicken broth. As mix thickens add in potatoes and green onion.  Bring to a boil. Continue stirring frequently as mix comes to a boil. Reduce heat and simmer for 10-15 minutes. Mix in salt, pepper, cheese(sour cream if desired) and bacon. Simmer for an additonal 10 minutes as cheese melts.


1 C. butter
1 C. flour
3 C. chicken broth
4 C. milk
4 large baked potatoes, cubed
5 green onions, chopped
1 tsp. salt
2 tsp. pepper
2 C. shedded cheddar cheese
12-15 cooked bacon, crumbled
1 C. sour cream (optional)
